Fig energy balls

  1. Soak the dried figs in hot water for 5-10 minutes.
  2. Add the cashews to a food processor and blitz until roughly crushed.
  3. Add in the drained fig, oats, almond butter, cocoa powder, cinnamon, vanilla extract, salt, and 1 tablespoon of water to the food processor. Blend until well combined. Add more water (1 tablespoon at a time) if needed.
  4. Press 1-2 tablespoons of mixture between your hands and roll it into a ball.
  5. Store the energy balls in an airtight container in the refrigerator for up to 1 week.
